CHOCOLATE PEANUT BUTTER FAT BOMB
Ingredients:
3/4 C Coconut Oil, melted
2/3 C Crunchy Peanut Butter
8 T Salted Butter, melted
1/3 C Splenda
2 T Unsweetened Cocoa

Fat bomb recipes found on various low-carb sites - combined to come up with this recipe. Fat bombs are a great sweet treat for low-carb lifestyle, especially when extra "good" fats are needed!

GRANOLA
Ingredients:
3 C Oatmeal
1/2 C Butter
1/2 C Honey
1/4 tsp Salt
1/2 tsp Cinnamon
1/4 C Wheat Germ
1/4 C Flax Seed
1/2 C Brown Sugar
Directions:
Melt the butter in a 3-quart saucepan over medium heat. Add honey, cinnamon and salt and briefly heat with butter. Remove from heat and add oatmeal, wheat germ, flax seed and brown sugar. Pour onto cookie sheet lined with parchment paper. Bake at 375° for 10 minutes. Remove from oven and let cool. Store in airtight container.

CINNAMON PECANS
Ingredients:
1/4 C evaporated milk
1 C sugar
1/2 tsp cinnamon
2 T water
1/4 tsp vanilla
3 C pecan halves
Directions:
Combine all ingredients except pecans in a pot and cook over medium heat until sugar has dissolved. Add pecans and continue to cook until pecans are completely sugared with no syrup left in the pot. Spread on waxed paper and let cool. If any stick together break them apart before they cool.
A favorite in our house that is requested by Darlene time and time again! (love ya, Darlene!)
